Chicken Mayo Sandwiches

Ingredients:

* 4 slices bread, toasted
* A few lettuce leaves
* A few slices of tomato
* A few slices of cucumber
* 1 lb. chicken breast meat, cooked and chopped or shredded
* 4 - 5 tablespoons of mayonnaise
* A few sprigs of parsley, chopped
* Salt & pepper to taste

Instructions:

1. Combine chicken, mayonnaise, parsley, and salt and pepper to taste.

2. Mix well. Refrigerate to chill.

3. When you are ready to eat, just assemble everything! Spread the chicken mixture onto the bread slices. Top with lettuce, tomato, and cucumber.

Tips:

1. Toasting the bread will prevent it from being too soggy.

2. If you are using Kraft Mayo, dilute it a bit with the stock you used to boil the chicken. I find it a bit to sour to use it alone. (If you didn't boil your own chicken, use a bit of chicken broth).

3. It goes great with boiled eggs.
