Chili Cheese Puffs

by Linda St.Hilaire
(Attleboro, MA)

What You'll Need to Make these Chili Cheese Puffs:

* 1 pkg. puff pastry sheets, thawed
* 1 can chili (beans/no beans...either is fine...your preference, we like the beans)
* 1 8-oz pkg. cream cheese (softened)
* 1 cup shredded cheddar cheese
* 1/8 tsp. ground cayenne (red pepper)

Instructions:

1. Preheat oven to 400 degrees.

2. Roll a sheet of puff pastry into an 18"x 9" rectangle. Cut into 18 (3") squares.

3. Press into mini muffin cups. Bake 10 minutes.

4. Combine chili, cream cheese and ground cayenne. Fill each cup with 2 tsp. of mixture. Sprinkle with cheddar cheese.

5. Bake 5-7 minutes more. Let stand 5 minutes before serving.

Start making another batch as soon as this one comes out of the oven as you may not get one!
