Cowboy Caviar

What You'll Need for Cowboy Caviar:

* 1 (8-oz.) can white shoepeg corn, drained
* 1/2 to 1 can black-eyed peas, drained
* 2 avocados, chopped
* 2/3 cup green onions, chopped
* 3 roma tomatoes, chopped
* 2/3 cup cilantro, chopped

Dressing:

* 1/4 cup olive oil
* 1/4 cup red wine vinegar
* 2 garlic cloves, chopped
* 1 tsp. cumin
* 1/2 tsp. salt
* 1/4 tsp. black pepper

Instructions:

Combine the first 6 ingredients in a bowl. Pour dressing over top and mix well.

Serve with tortilla chips (and margaritas)!

Yield: approx. 3 or 4 cups??

Jennifer, I remember having this at your summer party last year and it was delish! The bowl emptied very quickly...I went back for a little more and it was gone! Thanks for sharing this yummy recipe! :)
