Easy Red Beans and Rice
This easy red beans and rice recipe is a traditional favorite in Louisiana!
It's a great dish to serve at a Mardi Gras party or a Super Bowl party.
This recipe was found in an issue of Southern Living magazine, which is famous for delicious southern recipes.
Ingredients:
- 1 pound dried red kidney beans
- 2 large onions, chopped
- 2 celery stalks, chopped
- 1 medium-size green bell pepper, chopped
- 1 garlic clove, pressed
- 2 pounds smoked sausage, sliced
- 1 teaspoon salt
- 1/2 tsp. pepper
- 1/4 cup chopped fresh parsley
- Hot cooked rice
How to Make Red Beans and Rice:
Bring kidney beans, next 4 ingredients, and water to cover to a boil in a Dutch oven. Cover, reduce heat, and simmer 1 1/2 hours.
Brown sausage in a nonstick skillet over medium heat, and drain. Add sausage to bean mixture, and cook, uncovered, 1 hour or until beans are tender. (Add more water to prevent beans from sticking, if necessary).
Stir in salt, pepper, and parsley. Serve over hot cooked rice.
Makes 12 cups.
