Presto Pasta

Prep time: 5 minutes
Cook time: 10-12 minutes
Ingredients:
1 box of Rotini Pasta
1 carton of cherry tomatoes
1 bundle of scallions (about 5 or 6)
4 basil leaves
4 tsp. of chopped garlic
1 cup of mozzarella cheese
Extra virgin olive oil
2 tsp. of italian seasoning
1 tsp. of oregano
1 tsp. of savory
1 tsp. of marjoram
1 tsp. of parsley
½ tsp. of salt
½ tsp. of pepper
(Add chicken or shrimp, if desired. Cook separately.)
Prep:
1. Cut cherry tomatoes in halves and chop scallions. Only chop the white and about two inches of green on scallions, toss the rest of it.
2. In a pot, boil water. Season with a toss of salt, and boil pasta. Set on low/medium until cooked.
3. In the meantime, while pasta is cooking, take a deep saucepan and coat with extra virgin olive oil. Set temperature to low/medium and heat oil. Add garlic and let simmer until garlic gets a little brown. Add tomatoes, scallions, all seasonings except parsley. Cover and let simmer for 5 minutes.
4. Drain pasta and put back in the pot, add mixture from saucepan, and stir in cheese. If you are serving chicken or shrimp, add to pasta after it is mixed. Plate servings, top off with parsley and enjoy.
